Really Easy Freezer Lasagna

I know a mother with three young children who is currently undergoing treatment for cancer.  I wanted to make a yummy dish that her husband could just pop in the oven.  I came up with good old freezer lasagna.  Here is my recipe for two medium lasagnas 4-6 servings each:

Ingredients:
2 lbs. lean ground beef
1 medium onion finely chopped
2 large cloves of garlic minced
3 cans of  26.5oz pasta sauce
2 tsp Italian Seasoning
1 Large container of cottage cheese (2 lb)
3 cups shredded Mozzerella cheese
3 cups shredded Monteray Jack cheese
1 packet of boiled lasagna noodles 16oz
Salt and Pepper to taste (canned pasta sauce tends to be high in sodium so be careful not to add too much)


Steps:
Brown hamburger, garlic, and onion.
Drain excess fat.
Add pasta sauce, italian seasoning, salt and pepper.


Simmer for 15 min. or as desired.
Allow to cool.


Layer cooked noodles on the bottom of your pan.


Add a layer of meat sauce.


Next add a layer of cottage cheese.


Top with cheese, then repeat.


Cover with tin foil.  Place in freezer.  It can be stored there for up to 3 months.  When ready to bake, remove the day before an thaw out in the refrigerator.  Then place in the oven at 350 degrees for 40 minutes until sauce is bubbly and hot.

Total Cost per Serving: $1.56 to $2.34 depending on svg. size
Hamburger 2 lbs $3.36 ($1.68 lb at Safeway currently)
Lasagna noodles $1.69 (Safeway Brand)
Onion 38¢ (Fred Meyer)
Garlic approx. 10¢
Hunt's Pasta Sauce $2.37 (Recently on sale at Fred Meyer for 79¢ each)
Cottage Cheese $3.40 (Safeway)
Mozzarella Cheese $1.00 (Fred Meyer $3.99 Tilamook last week)
Montaray Jack Cheese $1.00 (Fred Meyer $3.99 Tilamook last week)
