Baking Day Is Done!


I am happy to report that baking day is done thanks to help from my daughter!  I will be the first to admit that I am no queen of the kitchen and am happy to retire my apron (at least until tomorrow)!  For the most part all went well.  I changed up my original plans and  made 4 different kinds of cookies and one batch of fudge.  The only things that didn't turn out were my No Bake Cookies.  I make them a lot, and for some reason they decided not to harden this time.  Oh well, that's 4 out of 5 that were a success!

Russian Tea Cookies: Turned out just like my grandma's!

Haystacks:  Yummy and also easy.

Sugar Cookies: I only made a few dozen and plan to make more tomorrow with the dough I have left over in the fridge.

Chocolate Peanut Butter No Bake Cookies: Quick and easy recipe that usually turns out great.

Chocolate Peanut Butter Fudge:   This is my mom's recipe, and it's my favorite!

Ingredients:
12 TBSP's of cocoa
1 cube of butter
4 cups of sugar
1/2 tsp of salt
1 can of evaporated milk
1 tsp of vanilla
1 cup of peanut butter

Directions: Melt butter and cocoa.  Add sugar, salt and evaporated milk over medium heat.  Bring to a boil.  As soon as you can form a ball with the mixture in cold water, it is time to remove from heat.  Then add vanilla and peanut butter.  Pour into 9 x 13 pyrex pan.

We have company coming over for dinner tomorrow and I am baking a turkey, so I hope that I can get those other cookies done.  I was just too tired this evening.  But, the kitchen is clean and  now it's time to go through the Fred Meyer deals.  A mother's (or should I say a blogger's) work is never done!

Looks awesome! I have the same issue with the no-bak cookies sometimes too. Sticking them in the fridge works wonders and if that doesn't work- just heat them up and serve over warm ice cream!

I was baking cardamom bread and Gingersnap cookies on Saturday. The bread turned out especially good, not as good as Aunt Diana's of course, but still good :)
