Fred Meyer is having a sale on whole fryer chickens for 69¢ lb. Here is my Mom's recipe for delicious homemade chicken noodle soup that calls for whole fryer chickens. It makes an economical and yummy meal for your family. I made it last night and it was a hit.
Homemade Chicken Noodle Soup
Ingredients:
1 4 lb. fryer chicken, cleaned and quartered
1 box of 32 oz. chicken broth
4 cups of water
2 medium onions
4 carrots
4 celery stalks
1 box of your favorite noodles
2 cubes of chicken bullion
salt & pepper to taste
Directions:
Place chicken, broth, and 2 cups of water in a large pot. Add 1 onion, 2 carrots, and 2 celery stocks. All can be roughly chopped into large pieces. Bring to a boil, then simmer 60-90 minutes until chicken is thoroughly cooked and you have a nice stock for your soup's base.
Remove from heat. Separate stock, chicken and veggies using a strainer. Cooked veggies can be discarded. Place chicken on a cutting board and remove meat into bite size shredded pieces. Wait until chicken has cooled sufficiently before you do this! Replace stock back into your cooking pot. Add chicken and remaining uncooked veggies all chopped into bite sized pieces. Also add 2 cubes of chicken bullion and 2 cups of water. Bring to a boil for 5 minutes or until veggies start to soften. Then add your noodles and cook to desired tenderness. Add salt & pepper to taste. Makes approximately 6 servings.
This cost me roughly 93¢ per serving! These are my calculations:
Chicken $2.76 (4lb at 69¢ per pound at Fred Meyer $2.76)
Broth $1.00 ($1 at Albertsons last week using MF and double coupon)
Carrots 46¢ ($2.79 for 3 lb. bag at Fred Meyer)
Celery 50¢ (79¢ lb. at Fred Meyer)
Onion 38¢ (38¢ lb at Fred Meyer)
Noodles 50¢ box (On sale at Albertsons, used $1 MF and double coupon unsure of date)
Chicken Bullion 37¢ ($1.49 for 8 on sale at Fred Meyer)
