Last weeks menu planning went really well! I stuck to my plan with a only a few minor variations. It was so nice to go into the kitchen with a well thought out plan! This weeks meals are based on what I found on sale and items from my ever growing pantry stock. I like to plan meals that are easy and of course economical!
My Plan This Week:
Monday: Chicken Taco Salad (made with Doritos, catalina dressing, and cheddar cheddar cheese). Come back Monday for the recipe!
Tuesday: Pork Chops with Balsalmic Vinegar and Mushrooms, Rice Pilaf, Steamed carrotts
Wednesday: Chili, Cheesey Garlic Biscuits, Green Salad
Thursday: Easy Chicken Enchilladas with Cream of Mushroom Soup (with Free LaVictoria Salsa), Spanish Rice.
Friday: Homemade Pizza (will research recipe).
Saturday: Hamburgers, French Fries, Carrot Sticks.
Sunday: Homemade Chicken Noodle Soup, Leftover Homemade Rolls.

Sounds like a great menu!
I am such a dork though. When I first read "catalina dressing" my heart skipped a beat thinking I had missed out on a catalina sale. Maybe I need some sleep....
One other thing...Apparently I'm not thinking clearly here. :) I have a really great recipe for Pizza dough if you are looking for one. It really doesn't even need to rise even though it's a yeast dough. I make pizza or yummy garlic breadsticks with it if you need a good recipe.

Its been frigid here so chicken noodle soup sounds great!
Menu planning is great!! I usually scan the flyers and see whats on sale and what I have in the freezer and go from there.

We do a very similar taco salad! Kidney beans, ground beef, lettuce, olives, doritos and catalina dressing. We love it.
I'm working on my menu plan for this week. Last week went great and it really added some order to my crazy evenings.
My word verification for that last post was "foodi" how appropriate is that?!
That sounds like the recipe I have for toco salad, and I thought it was original! How funny!
