Chicken Taco Salad Recipe:
1/2 to 3/4 bag of Nacho Cheese Doritos
1 lb of chicken breast, cooked, chopped, and chilled.
2 cans of 14 oz. kidney beans (I chill in fridge ahead of time)
1/2 a head of iceberg lettuce
1 large or 2 small tomatoes
8 to 16 oz of shredded cheddar cheese (The more the better!)
1 16oz bottle of refrigerated Catalina dressing
Directions:
- Chop lettuce and tomatoes and place in a large bowl.
- Rinse and drain kidney beans. Add to bowl along with chicken and cheddar cheese.
- Crunch up Doritos into smaller piece and add to other ingredients.
- Pour in dressing to desired amount and mix contents.
Cost Breakdown:
Doritos: $1 ($1.99 at Fred Meyer recently)
Chicken Breast: $2 ($1.99 lb at Albies last week)
Kidney Beans: $1 (50¢ each at Fred Meyer last week)
Iceberg Lettuce: 50¢ (99¢ each at Fred Meyer)
Tomatoes: $1 (I used 2 Roma Tomatoes, $1.79 lb at Fred Meyer)
Cheese: $1.50 ($2.99 for 2 lb block Albies last week)
Dressing: $1.99 (I used generic Kroger brand)
Total: $9 or $1.50 per serving!

Yum! that sounds good! I make one that is similar but I use regular tortilla chips and then I add fresh cilantro and shredded carrots. Sometimes cucumber too if I have it.
