Menu Plan Monday: 3/1



I usually try to do my menu planning Sunday night, but it was a busy weekend and I was just too tired.  Better late than never though, right?

Last week we enjoyed a new pork chop recipe that called for corn flakes that I've been needing to use up.  It was a little bland for my taste, but my family enjoyed it.  I never got around to making the cream cheese and rice chicken, so I'm going to put it on this weeks menu.  I ended up having pizza for my birthday.  My friends think I'm crazy for passing up a dinner out, but yes, I'm that frugal!  I was perfectly happy not cooking and enjoying dinner with the kids.  The cake I planned to bake never came into fruition, but my family surprised me with a carrot cake from Safeway that was really good and I had a wonderful birthday!


Monday:  Tuna Casserole from last month's freezer cooking day and green salad

Tuesday: Amanda's Cream Cheese Rice with chicken.  I am going to substitute diced chicken breast for shredded chicken I made in the crock pot over the weekend and another green salad (splitting a bag each night.)


Wednesday:   Pork Chop Supper (calls for peas, carrots, and potatoes), and dinner rolls.

Thursday:  Tacos with the works

Friday:  Mac & cheese, hot dogs, and veggie chips.

Saturday:  Up in the air

Sunday:  Roast Chicken and veggies, dinner salad, cheesy garlic biscuits.

Menu Plan Monday 2/22



Are you doing menu planning?  I didn't do one last week, so it's time to get back on the band-wagon, so to say!  I love Supercook, an easy to use site that helps me plan my meals based on the food I already have in my pantry.  If you haven't visited this site yet, I recommend you check it out.  It's a fun and convenient way to help with meal planning for those of us who need a little inspiration.  You can also head over to I'm an Organization Junkie to find even more menu ideas.


Monday:  Chili and cheesey garlic biscuits.  (My hubby was just commenting on how many cans of beans and tomatoes I have stockpiled!)

Tuesday: Amanda's Cream Cheese and Rice Chicken (he also commented that I need to find a way to use up all of the cream cheese I have, so voila!)

WednesdayOven-Crisped Pork Chops (calls for Corn Flakes and lime, which I happen to have.), steamed asparagus, brown rice.

ThursdaySour Cream Chicken Enchiladas, tortilla chips and salsa

Friday:  My Birthday, so I will wait and see:)

Saturday:  Hamburgers on the good old George Foreman Grill, Baked French Fries, and veggies sticks.

Sunday:  Meat Loaf if hamburger goes on sale. (Has anyone seen a good deal?)  Mashed potatoes, and frozen corn from the freezer.

Menu Plan Monday: 2/8

 
It's time to think about my menu plan again.  Honestly, I am starting to dread this part of my Sunday afternoons.  Don't get me wrong, I love having a menu plan, it's just that it's becoming a struggle for me to come up with new ideas.

So, I'm really happy that Saving & Giving recommended a cool recipe planning site today.  It's called Super Cook and it's FREE!  All you do is type in products that you already have in your pantry and you are linked to a multitude of recipes posted on the web that contain those ingredients.  Awesome!!!

I used it to come up with several of the meals listed below:

MondaySpanish Rice with black beans, Baked Carrots

Tuesday:  Lasagna from the freezer, spinach salad, corn.

Wednesday: Cheesy Chicken, Broccoli and Rice Casserole

Thursday:  Tuna Casserole with Peas from freezer, green salad, Pillsbury Crescents from freezer

Friday:  Grilled Cheese Sandwiches, Tomato Soup

SaturdayEasy Pork Chop Casserole, steamed carrots

Sunday:  Valentine's Day dinner out- hint, hint!  (this will be posted on my fridge :)

Menu Plan Monday 2/1

 

It's time once again for Menu Plan Monday.  I'm happy that this is becoming a routine for me!  I've been trying new recipes each week and it's been a lot of fun.  So far, nothing has completely bombed.  Let's hope this week is no exception.  Here's what I will be preparing:

Monday:  Chicken Tetrazinni (It's freezer cooking day, so I'm making an extra dinner), applesauce

TuesdayCream of Mushroom Lasagna (new recipe to me), green salad, bread sticks

Wednesday:  Homemade macaroni and cheese and steamed broccoli, homemade muffins

ThursdayCrock Pot Lemon Chicken with carrots and brown rice

Friday: Cheese-Stuffed Meat Loaf, mashed potatoes, corn

Saturday: Mexican-Style Rice & Bean Burritos, tortilla chips and salsa

Sunday: Undecided, probably eating Super Bowl Snacks!

Menu Plan Monday 1/25



It's time for Menu Plan Monday once again, where I get to share how my last week of planning went, and what I have in store for the coming week.  I have to admit, this is only my fourth week of doing this, and I am already running out of steam.  I never realized how small my recipe box is and can't  believe I am starting to have trouble coming up with new ideas.  Sad, I know, but fortunately my family never really complains.  Maybe they will be really happy now with some new creativity at the dinner table!

Last week I pretty much stuck to my menu plan.  Once again I shuffled meal days, but the meals themselves mostly went according to the plan.  I did have to use chicken in one recipe instead of pork because I was out.  On Saturday I got busy going through ads, so my husband just went and got a pizza from Papa Murphy's, my old standby.  There were no other major changes.

After checking out a few other plans at I'm an Organization Junkie for inspiration, here's what we will be eating this week:

Monday:  Chicken noodle soup with homemade egg noodles, rolls. I make this a lot, but it's a family favorite.

Tuesday:  Sloppy Joes, baked fries, green salad.

Wednesday:  Tuna Casserole, peas, Pillsbury bread sticks.

Thursday:  Baked pork chops with rice in cream of mushroom soup, mixed veggies.

Friday:  Broccoli cheddar quiche, and ?

Saturday:  Farmhouse chicken, mashed potatoes, green beans.

Sunday:  Going to Seattle Children's Museum, so dinner out.

Menu Plan Monday: 1/18



I'm happy to report that I am sticking to my goals and continuing to do weekly meal planning.  It really seems to give me peace of mind to have a plan ahead of time.  It's definitely a money saver to plan meals around what's on sale and what's in my stockpile too.  This week I added lots more pasta sauce to my pantry, so of course I will utilize that one night.

Last week went fairly well.  I ended swapping around several meals.  On Wednesday I didn't even cook because my baby had a late nap, my oldest daughter was at work, and I lost track of time on this darn computer.  We ended up eating Progresso soup.  At least it was frugal!

Monday: Spaghetti Bake, corn, green salad.

Tuesday:  Pasta Primavera (will substitute asparagus for broccoli that I have in the fridge and cream cheese for the Neufchatel), bread sticks.

Wednesday:   Crock Pot Chicken with potatoes and carrots, rice pilaf.

Thursday:  Pork Chow Mein with noodles and hard boiled eggs, steamed veggies.

Friday:  Nachos with ground beef and the works.

Saturday:  Chef Salads (deli meat, cheese, and veggies), frozen dinner rolls from the freezer.

Sunday:  Up in the air!

Menu Plan Monday


Last weeks menu planning went really well!  I stuck to my plan with a only a few minor variations.  It was so nice to go into the kitchen with a well thought out plan!  This weeks meals are based on what I found on sale and items from my ever growing pantry stock.  I like to plan meals that are easy and of course economical! 

My Plan This Week:

Monday:  Chicken Taco Salad (made with Doritos, catalina dressing, and cheddar cheddar cheese).  Come back Monday for the recipe!

TuesdayPork Chops with Balsalmic Vinegar and Mushrooms, Rice Pilaf, Steamed carrotts

Wednesday:  Chili, Cheesey Garlic Biscuits, Green Salad

ThursdayEasy Chicken Enchilladas with Cream of Mushroom Soup (with Free LaVictoria Salsa), Spanish Rice.
 
Friday: Homemade Pizza (will research recipe).
 
Saturday: Hamburgers, French Fries, Carrot Sticks.
 
Sunday: Homemade Chicken Noodle Soup, Leftover Homemade Rolls.

Menu Plan Monday



As part of my goals for the New Year I have decided to participate in I'm an Organization Junkie's Menu Plan Monday.  So many frugal moms I know and many of my favorite bloggers swear by it, so I've decided to give it a try.  I usually have no idea what I am going to cook until I hit the kitchen.  I am hoping that planning my menu will save me time, money, and energy.  I also need to work on my creativity, as my family can probably attest to how boring I am in the kitchen.  By sharing my plans with the world I am forced to become a little more interesting!  So, here goes:

Monday: Chicken and Vegetable Stir Fry with rice.
Tuesday:  Polska Kielbasa & Sour Kraut on hoagie rolls, with carrot raisin salad.
Wednesday: Spaghetti w/ meat balls, green salad, and corn. (Free Artichoke Pesto from Safeway)
Thursday: Potato Bacon Soup with leftover rolls from the holidays (from freezer). Very Fugal!
Friday:  Papa Murphy's Pizza.  (Will use $3 off coupon I have.)
Saturday: BBQ Chicken with Brown Rice, steamed veggies, and fruit salad.
Sunday: my "to be determined" day.

 Ok, so this is still kind of boring, but since I promise next week I will try to make it a little more exciting.  I usually don't cook on Fridays, hence the pizza.  I am also leaving Sundays open as my to be determined day.  I will report how it goes!
